Who Knew Guacamole Could Be Sexy? The whack of the sharp knife. The clean circular slice. The scoop of the firm flesh. The squeeze of the lime. Anita’s Guacamole has an intriguing way of preparing their guacamole—it is made fresh before your eyes. While you watch, whole avocados are sliced open, the flesh scooped out and flung in a large mixing bowl along with freshly chopped herbs, tomatoes, and other fresh ingredients. Limes are cut and liberally squeezed on top. The mixture is tossed with long hand carved wooden spoons. And Mauricio Mendez learned it all from his Grandmother in Miami.

She took a family guacamole recipe she learned from her mother Anita (Hence the name Anita’s) and began selling it at markets and in stores around Miami. Her grandson Mauricio expanded her reach into the Philadelphia area and calls this area home during the hot Florida summer. Anita’s Guacamole and salsa are vegan and all natural. Dairy free and preservative free. Their fresh Salsa is a perfect accompaniment as are their tortilla chips. Mauricio is offering a special this week to everyone who mentions they saw this profile: Free salsa with the purchase of a large guacamole. Come to Market this Saturday to watch the Guac Master Mauricio.

Early Saturday morning, just after the morning fog burns off but before the crowds arrive to the market, Caleb Torrice of Tabora Farm & Orchard carefully arranges his tables. His first table will soon become covered with his fresh baked breads, pies, crumb cakes, and muffins. He continues to the next table which sits happily underneath coffee dispensers, filled with his custom roasted coffee, Tabora Blend. Caleb walks down to the other side carefully placing more cookies, muffins, then adding berries, dumplings, and fruit sticks. He finishes with another pass through his tables, ensuring that each is ready for the arriving customers.

Growing up near the New York/Canadian border, Caleb learned to tend an orchard, speak French, and grew to love the quiet life of a grower. Caleb along with his wife Patricia grow produce and fruit on their farm in Chalfont and offer it to others through their family owned and operated gift store, winery, bakery, and deli.

Come enjoy the fruit of Caleb’s lifelong devotion to the land. Visit Tabora’s website.

What you notice first is his big smile and friendly greeting.  Look down and you see his labor of love spread out on a gingham table cloth.  Snap peas, greens, beets, zucchini, cucumbers, cabbage, and sweet onions all freshly picked that morning. Potted herbs are ready to be taken home and set on your patio.

He offers honey gathered from the bees around his farm. And then you look back up and see the pride in his face.  Farming is in Farmer Thad’s blood. Both his grand-father and father farmed before him.  He has been helping on the farm since he was 6 and started his first farm stand when he was nine.  The greenhouses on his small farm in the little village of Tylersport, PA (near Telford) grow fresh greens and spinach in the winter and he sells chemical free produce year round. As the season continues he will have the first locally grown tomatoes too.  Come to the market and say Hi to Farmer Thad.  You’ll leave with a smile on your face.

Passion. Love. Commitment. These words may not spring to mind when you meet Matt Mood from Windy Springs Farm. He’s a tall soft spoken man quietly explaining to customers the attributes of farm raised and fed beef from his 900 acre family farm in Quakertown, PA.

Ask him about being a fourth generation farmer or the quality of their meats and produce and passion lights up his face. “You’ve got to love it to do it” he says when describing the life of a farmer. Matt’s father started to branch out his family’s farm business as a boy by selling produce door to door as a “huckster” and in the 1970’s started a produce stand on Rte. 663 in Quakertown. Matt has followed in his father’s footsteps at the Lansdale Farmers’ Market and has a loyal and entusiatic following. Matt, along with his brother, his mother, and his wife Rachael, tend the fields and livestock from dawn to dusk every day of the year.

They raise Semmental cattle which have been born on their farm and fed roasted barley, oats, wheat and rye grown at Windy Springs. This combination of grains in addition to their grazing gives the beef a tender full flavor. On Saturday for the first time Windy Springs is offering their 5-6lbs. roaster chickens. No hormones or antibiotics are given to their cattle or to their chickens. The cuts of meat are vacuum packed and frozen in clear wrapping for the convenience of their customers. Come meet Matt and Rachael this week at Market.

Dennis from Alice Bakery begins unloading his white delivery van early Saturday morning.  He’s been up all night at his bakery kneading dough and hand shaping breads, rolls, French baguettes.  He looks exhausted but when he sets out the baskets of bread-The aroma! The shapes! And the taste!  Every customer raves about the taste and the freshness. Close your eyes when you take a bite of a sea salt roll and you are instantly transported to a Parisian Avenue. People buy a roll and take a huge bite before they step away.  Dennis accepts the compliments with a happy but tired smile.

Owner and artisan baker Dennis Darr opened Alice Bakery in North Wales in November 2010 and has been too busy to look back.  Alice Bakery is exclusively an artisan bakery which makes everything by hand. Alice Bakery uses only the best ingredients to make their Gorgonzola tricolored cracked peppercorn cheese bread, French baguettes, focaccia and 3-yr aged Gouda bread.  Dennis is a graduate of a French pastry school and has cooked for President Obama, Robert Redford, Lisa Lang, and Al Roker and has appeared on the Oprah Winfrey show.

As a 5 year old Dennis would spend time with his Grandmother Alice in her kitchen watching her make pies.  One day she gave Dennis pie dough scraps and he shaped them into a little pie crust and filled them with preserves. Voila! His love and inspiration for baking was born in his Grandmother’s kitchen.

Find out what Dennis is baking this week.
